CDRIVER-3799 introduced support for Azure and GCP KMS providers, but these were never documented.
I believe mongoc_auto_encryption_opts_set_kms_providers needs to be updated to capture the spec content for kmsProviders.
Additionally, mongoc_client_encryption_datakey_opts_set_masterkey should also be updated (per masterKey).
