      Context

      Langchain is decentralizing its API documentation. We should produce our own and host on ReadTheDocs.

      Definition of done

      Langchain-mongodb and Langgraph-checkpoint-mongodb docs are available on ReadTheDocs and integrated into our CI workflows.

      Pitfalls

      Because we have a monorepo, it isn't a standard Python documentation setup. We might need to borrow from https://github.com/langchain-ai/langchain/blob/master/.github/workflows/api_doc_build.yml.
