Trouble reading documents with empty embedded arrays

      The bug reported in https://github.com/mongodb-labs/mongo-arrow/issues/208 was meant to have been fixed in INTPYTHON-230, but it persists. I can reproduce their error with the same code with pymongoarrow-1.6.0 and pymongoarrow-1.7.1. We should add this exact test case when making the fix.
