Use "read-only" in documentation

      Mongoid has methods that are called "readonly?" and "readonly!". While the names of these methods are fine, I think when we are referring to the functionality in documentation, we should use the term "read-only" as being more correct English, e.g. "Read-only documents".

      This ticket proposes to only change documentation, all methods and exception names that use "readonly" should remain as they are.
