Evergreen config for 8.1-stable is broken for many tests

      This applies to Mongoid 8.1-stable (and probably earlier stable branches as well). Any test that is configured to run on an "rhel80" host will fail in Evergreen, because all tests for those branches are run in Docker, on Evergreen, and there is no rhel80 image available for Docker. We try to make do with rockylinux, but it's not perfect.

      We should examine what we're doing for master (I suspect we're not using Docker on Evergreen? Or maybe we've found a more compatible image than rockylinux?) and back-port that to 8.1-stable and 8.0-stable, at least.
