We stick to the 5.0 roadmap here. Concretely:

Add x64 Amazon Linux v2 Docker pkg + E2E tests
Add x64 Debian 9 Docker pkg + E2E tests
Add x64 Debian 10 Docker pkg ~~+ E2E tests~~
Add x64 RHEL 8 ~~Docker pkg +~~ E2E tests
Add x64 SLES 12 Docker pkg + E2E tests
Add x64 SLES 15 Docker pkg + E2E tests
Drop x64 Ubuntu 16.04 Docker pkg + E2E tests (note: we added a note to the docs that Ubuntu 16.04 users may have to install their own mongocryptd, as the one we include in the Linux packages does not work there)
Add arm64 Amazon Linux v2 unpack pkg + E2E tests
Add arm64 Ubuntu 20.04 unpack pkg + E2E tests
Make sure that ppc64le support is limited to RHEL 8.x
Make sure that s390x support is limited to RHEL 8.x
Double-check that this list is complete
