De-duplicate $out and $merge testing

      During development of $merge we added some basic testing of the $merge stage as we developed it. In some other work (linked as depended on) we're migrating test coverage of the old "insertDocuments" and "replaceDocuments" modes of $out to use $merge instead. After we migrate those tests, we'll probably be left with some duplicate coverage, which we should remove as part of this work.
