Add sharded force-classic perf configuration

      In DSI, we have standalone & repl set force-classic configurations but no sharded force-classic config. Having one would make classic-specific code changes, for example SERVER-75732, easier to evaluate, and it would complement the existing sharded bonsai and shard-lite/shard-lite-all-feature-flags configs.
