Since the switch to the new build system, the cmake configuration system is missing configuration options that were included in the old auto build tools or is missing the documentation for enabling these options. Here is what I saw missing:

1. No documentation for using -DENABLE_TCMALLOC
2. Missing --enable-memkind (being addressed in WT-8936).
3. No instructions on how to build with --enable-strict.

There are probably other missing feature that I didn't notice. Someone should check that all the options and their documentation is ported to CMake.
